Lievito bakery is an artisan bakery that has won over its neighbors with the aroma of its baked goods every morning. Founded by a family of bakers with European roots, this bakery specializes in sourdough breads, rustic loaves, homemade pastries, and whole-grain products without additives; but the warm atmosphere and friendly service are what characterize us. Lievito Bakery is community. We are a team of passionate bakers who believe in the magic that happens when flour, water, and time come together with care. Every morning, we craft fresh breads, pastries, and treats that reflect both tradition and creativity. Meet Our Bakers:

1. Elena — Pastry Baker & Laminated Dough Expert

If you’ve ever bitten into one of Lievito’s buttery croissants or marveled at the crisp layers of our morning buns, you’ve tasted Elena’s work. Originally trained as a pastry chef in Lehi, Utah, she discovered her love for laminated dough early in culinary school — drawn to the delicate precision, the temperature control, and the creativity involved.

Elena brings a blend of French technique and homegrown comfort to Lievito Bakery. She manages our entire pastry program: mixing, laminating, shaping, and baking every croissant, kouign-amann, Danish, and tart that leaves our oven.

2. Marco — Head Baker & Sourdough Specialist

Marco is the steady heartbeat of the Lievito Bakery kitchen. Born in a family of Italian bakers, he grew up around wild starters, rustic loaves, and early-morning dough mixing. His fascination with the science of fermentation started young — but his artistry developed through years of hands-on work in small artisan bakeries across Europe.

At Lievito, Marco oversees the entire bread program. He nurtures our sourdough starter each morning, shapes and scores our signature loaves, and guides the team through consistent small-batch production. His favorite part of the job? “Seeing customers pick up a warm loaf and smile; that moment connects all the early mornings, all the patience, all the craft.”

He’s also the creative mind behind our rotating seasonal breads. The olive-rosemary filone and apricot-walnut loaf are two of his proudest creations.

3. Sam — Dough Technician & Early Morning Mixer

Every great bakery needs someone who thrives in the quiet hours before dawn — and for us, that’s Sam. He starts his day when most of the world is still asleep, scaling ingredients, mixing doughs, monitoring hydration, and setting the entire team up for success.

Sam discovered baking later in life. What began as a quarantine sourdough hobby turned into a full-blown passion, leading him to pursue formal training and eventually join the Lievito Bakery team. His background gives him a unique perspective: “Bread humbles you. It teaches patience, and it rewards consistency.”
